Vroom Vroom Sandwiches

Ingredients
For the sandwiches
2 medium eggs
2 tbsp mayonnaise
1/2 avocado
lemon juice
2 slices Baker Street rye bread
2 tbsp mayonnaise

To decorate
red and yellow pepper, sliced
carrot, sliced into rounds
cucumber, sliced
cherry tomatoes
hard boiled egg, sliced

Method
- Put the eggs into boiling water and boil for 10 minutes, drain, cool and peel. Roughly chop the egg and mix with the mayonnaise. Spread the egg mixture over one of the slices of bread. Decorate the sandwich with the vegetables to make a car.
- Mash the avocado in a bowl. Add the lemon and mix together. Spread over the rye bread. Use the vegetables and sliced egg to decorate to make a car.
