Hidden Vegetable Tomato Sauce

This colourful and flavourful sauce is perfect for batch cooking and stocking in the freezer for a rainy day – or simply one where you’re lacking food inspiration. Mix with pasta shells, meatballs or add some stock and serve as a delicious soup. Bursting with goodness from the plump Piccolos, this tomato sauce is packed with heaps of Vitamin E, C and K, so you can rest assured that your little one is hitting their nutritional targets in the tastiest way possible.

Ingredients

1 tbsp olive oil
1 onion, chopped
1/2 red pepper, diced
2 cloves garlic, crushed
75g sweet potatoes, peeled and diced
250g Piccolo cherry tomatoes, halved
150ml passata
200ml vegetable stock
2 tbsp basil, chopped

Method

  1. Heat the oil in a saucepan. Add the onion, pepper and garlic and fry for 3-5 minutes. Add the sweet potatoes, tomatoes and sauté for 2 minutes. Add the passata and stock.
  2. Cover and simmer for 15 minutes until tender.
  3. Add the basil and blend until smooth using a stick blender.
