Veggie Packed Frittata Muffins 4-ways

These frittata muffins are so simple to make and very versatile, making them the ideal recipe for using up leftovers. With four different flavour combinations to choose from, there’s a frittata muffin here for everyone!

Ingredients

Salmon, Tomato, Cheddar & Basil:
3 large eggs
2 tbsp milk
50g Cheddar, grated
100g cooked salmon fillet, flaked
2 tbsp basil, chopped
100g cherry tomatoes, chopped
Potato, Pea, Tomato & Cheese:
3 large eggs
2 tbsp milk
75g cooked potato, diced
25g frozen peas
100g cherry tomatoes, chopped
50g Cheddar, grated
1 tbsp basil, chopped
1 tbsp chives, chopped
Chicken, Tomato, Spinach & Spring Onion:
3 large eggs
2 tbsp milk
25g Parmesan cheese, grated
50g cooked chicken, diced
75g cherry tomatoes, chopped
20g baby spinach, chopped
3 spring onions, sliced
Tuna, Sweetcorn, Tomato & Broccoli:
3 large eggs
2 tbsp milk
25g Cheddar, grated
70g broccoli
1 can tuna, drained
3 tbsp sweet corn
75g cherry tomatoes, chopped

Method

Salmon, Tomato, Cheddar & Basil

  1. Preheat the oven to 180 C.
  2. Crack the eggs into a bowl. Add the milk and beat together until blended. Add the cheese, tomatoes, salmon and basil . Season and mix well. Put a 6 hole silicone muffin case onto a baking sheet.
  3. Spoon the mixture into the muffin tray. Bake in the oven for 18-20 minutes until pale golden and set.

Chicken, Tomato, Spinach & Spring Onion

  1. Preheat the oven to 180 C.
  2. Crack the eggs into a bowl. Add the milk and beat together until blended. Add the cheese, tomatoes, spinach, chicken and spring onions. Season and mix well. Put a 6 hole silicone muffin case onto a baking sheet.
  3. Spoon the mixture into the muffin tray. Bake in the oven for 18-20 minutes until pale golden and set.

Tuna, Sweetcorn, Tomato & Broccoli 

  1. Preheat the oven to 180 C.
  2. Blanch the broccoli in boiling water for 3 minutes. Drain and run under cold water. Roughly chop.
  3. Crack the eggs into a bowl. Add the milk and beat together until blended. Add the cheese, tomatoes, broccoli, tuna and sweetcorn. Season and mix well. Put a 6 hole silicone muffin case onto a baking sheet.
  4. Spoon the mixture into the muffin tray. Bake in the oven for 18-20 minutes until pale golden and set.

Potato, Pea, Tomato & Cheese 

  1. Preheat the oven to 180 Fan.
  2. Crack the eggs into a bowl. Add the milk and beat together until blended. Add the cheese, tomatoes, peas, potato and herbs. Season and mix well. Put a 6 hole silicone muffin case onto a baking sheet.
  3. Spoon the mixture into the muffin tray. Bake in the oven for 18-20 minutes until pale golden and set.
