Ingredients
175g self-raising flour
1 tsp baking powder
2 eggs, beaten
6 tbsp milk
50g Parmesan, grated (or vegetarian alternative)
6 spring onions, sliced
100g Piccolo cherry tomatoes, diced
2 tbsp basil, chopped

Method
- Preheat the oven to 180 Fan.
- Measure all of the ingredients into a bowl and mix together until well combined.
- Spoon into a deep 12-hole silicone mini muffin tray.
- Bake in the oven for 15-18 minutes until well risen and lightly golden.
- Pop the muffins out of the tray and cool on a wire rack.
