15 Minute Creamy Tomato, Turkey & Pea Pasta

Ingredients
2 tbsp olive oil
2 small onions finely chopped
1/2 small red pepper finely diced
250g minced turkey or chicken
2 cloves garlic, crushed
2 tbsp tomato puree
250g cherry tomatoes, halved
1 tbsp thyme, chopped
250ml chicken stock
100ml double cream
225g Garofalo’s Boccole pasta
75g frozen peas
40g Parmesan cheese
2 small onions finely chopped
1/2 small red pepper finely diced
250g minced turkey or chicken
2 cloves garlic, crushed
2 tbsp tomato puree
250g cherry tomatoes, halved
1 tbsp thyme, chopped
250ml chicken stock
100ml double cream
225g Garofalo’s Boccole pasta
75g frozen peas
40g Parmesan cheese
Method
- Heat the oil in a large frying pan. Add the onion and pepper and fry for 3-4 minutes. Add the turkey and fry until browned and sealed.
- Add the garlic and tomato puree and fry for 30 seconds. Add the tomatoes, thyme and stock.
- Cover with a lid and simmer for 8 minutes. Remove the add the cream.
- Meanwhile, cook the pasta according to the timings on the back of the packet. Add the peas to the pasta water 3 minutes before draining.
- Add the drained pasta and peas to the pan with the cheese. Season lightly and toss together.
