Strata with Cheese, Bacon, Eggs & Tomatoes
This savoury casserole baked with eggs, cheese, bacon and tomatoes is the most delicious way to use up any leftover bread. So, if you’ve got a few slices of leftover loaf hanging around please don’t chuck it.

Ingredients
1 tbsp sunflower oil
200g smoked bacon, chopped
6 large eggs
150ml milk
100g Cheddar cheese, grated
6 slices of white bread, cubed
200g cherry tomatoes, chopped

Method
- Preheat the oven to 180 Fan.
- Heat the oil in a frying pan. Add the bacon and fry until crispy. Drain on kitchen paper.
- Beat the eggs and milk together in a bowl. Add half of the cheese, cubed bread, tomatoes and bacon. Mix well and season. Pour into an ovenproof dish. Sprinkle with the remaining cheese.
- Leave to soak for 30 minutes.
- Bake in the oven for 30 minutes until the middle is set and the top is golden and crispy.
