Peanut Butter & Cranberry Energy Balls
We all seem to be busy bees these days, which is why my energy balls are the perfect no-cook snack for when your family is on the go. The fibre-rich cranberries and the healthy fats in peanut butter contribute to a happy gut, keeping digestion in check and energy levels up. What’s more, this is the perfect recipe to get kids bussing in the kitchen!

Ingredients
50g soft pitted dates, chopped
4 tbsp boiling water
3 tbsp smooth peanut butter
150g porridge oats
50g cranberries, chopped
20g ground almonds
30g Rice Krispies
1 tbsp chia seeds
2 tbsp sunflower oil
4 tbsp boiling water

Decoration
1 tsp cocoa powder
8 cranberries (for the eyes)
1tsp sliced almonds (for the wings)

Method
- Put the dates and boiling water into a bowl. Leave to stand for 5 minutes. Place in a processor and whiz until smooth
- Add the rest of the ingredients to the food processor and whiz together until finely chopped and the mixture has come together. If the consistency is too dry, Add some water into the blend. Shape into 16 ovals.
- For the decoration mix cocoa powder with water and dip a toothpick in the mixture to paint the stripes to bee’s body.
- Cut the cranberries in half and roll in your fingers to make the eyes and add the flaked almond wings.
