50g caster sugar
50g soft butter
1 egg, beaten
75g ground almonds
1/2 tsp almond extract
375g ready rolled puff pastry sheet

Method
- Preheat the oven to 180 Fan. Line a baking sheet with non-stick paper.
- Put the butter and caster sugar into a bowl. Mix well until creamy. Add the egg and beat well. Add the ground almonds and extract and mix until smooth.
- Unroll the pastry and stamp out 6 x 12 rounds using a 12cm round cutter. Score a 1/2 cm border around the edge. Put the rounds on the baking sheet. Divide the almond paste between the rounds, spreading out into the centre of the pastry.
- Slice the apples and arrange on top of the almond paste. Sprinkle the tops with caster sugar. Brush the edge with beaten egg.
- Bake in the oven for 20 minutes until well risen. Brush the apples with honey and put back into the oven for 5-8 minutes until golden and crisp.
