Cranberry & Pecan Cookies

This Cranberry & Pecan Cookies recipe is so quick & easy to make. Chewy cranberries & toasted pecans make for a winning cookie combo and a nice alternative to the classic choccie chip. If you have more of a sweet tooth, you can swap the pecans for white chocolate chips – another winning combination and cookie crowd-pleaser!

Recipe Saved

Ingredients

100g butter or a non-dairy alternative
75g soft brown sugar
1 tbsp golden syrup
Pinch of salt
½ tsp vanilla extract
50g chopped cranberries
50g chopped pecans
170g self raising flour

Method

  1. Preheat the oven to 180C/350F.
  2. Measure the butter and sugar into a bowl.
  3. Whisk using a hand whisk until the mixture has lightened in colour.
  4. Add the golden syrup. Add the pinch of salt, flour, vanilla, pecans & cranberries.
  5. Bring the mixture together using your hands.
  6. Lightly knead and shape into 20 balls, then flatten on the baking sheet.
  7. Bake for about 10 minutes.
