Chicken, Apple & Carrot Balls
My famous Chicken & Apple Balls were a lifesaver for me and countless other parents of fussy eaters. My son Nick used to refuse to eat anything that remotely resembled a fruit or vegetable, which is what lead me to create my much-loved chicken and apple balls! Here’s a new take on one of my most popular recipes.

Ingredients
Ingredients:
1 banana shallot, diced
1/2 apple, grated
60g carrot, grated
50g breadcrumbs
250g minced chicken thigh
15g Parmesan cheese, grated (or dairy-free alternative)
1 tsp thyme, chopped
1/2 tsp sweet smoked paprika

Method
- Measure all of the ingredients into the processor. Whiz until finely chopped. Remove from the processor and shape into 20 balls.
- Preheat an oven to 180C / 160C Fan and cook the chicken balls for about 15 minutes turning halfway through until cooked through. Alternatively, heat a little oil in a pan and fry the balls for about 6 minutes turning occasionally until cooked through.
