Chicken, Apple & Carrot Balls

My famous Chicken & Apple Balls were a lifesaver for me and countless other parents of fussy eaters. My son Nick used to refuse to eat anything that remotely resembled a fruit or vegetable, which is what lead me to create my much-loved chicken and apple balls! Here’s a new take on one of my most popular recipes.

Ingredients

Ingredients:
1 banana shallot, diced
1/2 apple, grated
60g carrot, grated
50g breadcrumbs
250g minced chicken thigh
15g Parmesan cheese, grated (or dairy-free alternative)
1 tsp thyme, chopped
1/2 tsp sweet smoked paprika

Method

  1. Measure all of the ingredients into the processor. Whiz until finely chopped. Remove from the processor and shape into 20 balls.
  2. Preheat an oven to 180C  / 160C Fan and cook the chicken balls for  about 15 minutes turning halfway through until cooked through. Alternatively, heat a little oil in a pan and fry the balls for about 6 minutes turning  occasionally until cooked through.
