Tofu & Veggie Bites

Tofu can get a bit of a bad rep on the flavour charts due to its natural plainness. However, the beauty of this versatile soy product is that it absorbs flavour like a sponge. So, tofu can be to-fun to cook with!

Ingredients

100g cold cooked sweet potato mash
250g firm tofu, diced
60g carrot, peeled and grated
60g onions, chopped
60g red pepper, chopped
1 tsp dried thyme
30g Parmesan, grated (or vegetarian/dairy-free alternative)
80g panko breadcrumbs
100g brown mushroom, finely chopped
5g garlic puree
1 egg, beaten
20g sweet chilli sauce

Method

  1. Pre heat the oven to 200 Fan.
  2. Measure the ingredients into a processor and whiz well until finely chopped.
  3. Shape into 30 rounds and place on a baking sheet. Bake for 15 minutes.
