Hidden Veg Chicken Bolognese
This Bolognese recipe is a sure-fire bet to get kids eating their 5-a-day (even the most ardent of veggie-dodgers). Ingredients
1 red onion, finely chopped
½ red pepper, finely diced
1 small courgette, finely diced
1 carrot, peeled and finely diced
2 cloves garlic, crushed
500g Heck Simply Chicken mince
1 x 400g tin chopped tomatoes
1 tbsp sundried tomato paste
150ml chicken stock
2 tbsp fresh basil, chopped
½ red pepper, finely diced
1 small courgette, finely diced
1 carrot, peeled and finely diced
2 cloves garlic, crushed
500g Heck Simply Chicken mince
1 x 400g tin chopped tomatoes
1 tbsp sundried tomato paste
150ml chicken stock
2 tbsp fresh basil, chopped
Method
- Heat the oil in a large saucepan or skillet. Add the onion, pepper, courgette and carrot and fry for 5 minutes.
- Add the chicken mince a little at a time. Break up the mince and fry with the vegetables until browned and sealed.
- Add the garlic and fry for 30 seconds.
- Add the tomatoes, sundried tomato paste, stock and basil.
- Simmer for 20 minutes until reduced and you have a thick sauce.
