Ingredients
1 medium sweet potato (approx 200g) peeled & chopped
1 1/2 tbsp Annabel Karmel Organic Pasta Shapes
15 g unsalted butter
150 g tomatoes, skinned, deseeded & chopped
20 g Cheddar cheese, grated
2 tbsp milk

Method
- Steam or boil the sweet potato for 10 minutes or until tender
- Meanwhile, cook the pasta shapes according to the instructions on the packet, but without adding salt to the water
- Melt the butter in a small saucepan and sauté the tomatoes until mushy, then stir in the cheese until melted
- Blend the cooked sweet potato and tomato and cheese mixture together with the milk using a hand blender
- Stir in the pasta shapes
