Ingredients
180g spaghetti
75g broccoli florets
1 tbs sunflower oil
1 banana shallot, chopped
150g crème fraiche
1 chicken breast cooked, diced
300g cherry tomatoes, halved
50g Parmesan grated
2tbs basil, chopped

Method
- Cook the pasta in boiling water according to the packet instructions. Add the broccoli 3 minutes before the end of the cooking time.
- Remove 50mls of water before draining.
- Heat the oil in a frying pan. Add the shallots and fry for 2-3 minutes.
- Add the crème fraiche, tomatoes, chicken & basil.
- Bring up to the boil. Add the pasta broccoli & water.
- Add the cheese & toss together over the heat.
