Sweet Potato & Carrot with Mini Pasta Shells

Ingredients

200g sweet potato, peeled and diced
200g carrot, peeled and sliced
20g Cheddar, grated
50g mini pasta shells or shapes

Method

  1. Steam the carrot and sweet potato together for 12 mins until tender.
  2. Spoon into a bowl and blend until smooth. Add 5-6 tablespoons of water from the bottom of the steamer to loosen.
  3. Add the cheese and stir until melted.
  4. Cook the pasta. Drain and add to the puree.
