Annabel’s Favourite Oat & Raisin Cookies

Fill the biscuit tin (and empty it just as quickly) with these easy Oat & Raisin cookies. These are one of my all time favourite cookies, they are super easy to make and egg-free too!

Ingredients

85g softened butter
50g soft light brown sugar
1 tbsp golden syrup
1 tsp vanilla extract
75g self raising flour
½ tsp bicarbonate of soda
½ tsp salt
75g porridge oats
30g raisins

Method

  1. Preheat the oven to 180C / Fan 160C and line two large baking sheets with non stick paper.
  2. Measure the butter, sugar and syrup into a large mixing bowl an beat with an electric whisk until light and fluffy.
  3. Stir in the remaining ingredients and beat again until the mixture comes together .
  4. Divide the mixture into 12 balls and place them on the baking sheets, leaving space between each one to allow for spreading.
  5. Press the balls down slightly to flatten and bake for 12 minutes until lightly golden.
  6. Remove from the oven and leave to cool slightly on the sheets before transferring to a wire rack to cool completely.
