Annabel’s Favourite Oat & Raisin Cookies
Fill the biscuit tin (and empty it just as quickly) with these easy Oat & Raisin cookies. These are one of my all time favourite cookies, they are super easy to make and egg-free too!

Ingredients
85g softened butter
50g soft light brown sugar
1 tbsp golden syrup
1 tsp vanilla extract
75g self raising flour
½ tsp bicarbonate of soda
½ tsp salt
75g porridge oats
30g raisins

Method
- Preheat the oven to 180C / Fan 160C and line two large baking sheets with non stick paper.
- Measure the butter, sugar and syrup into a large mixing bowl an beat with an electric whisk until light and fluffy.
- Stir in the remaining ingredients and beat again until the mixture comes together .
- Divide the mixture into 12 balls and place them on the baking sheets, leaving space between each one to allow for spreading.
- Press the balls down slightly to flatten and bake for 12 minutes until lightly golden.
- Remove from the oven and leave to cool slightly on the sheets before transferring to a wire rack to cool completely.
